The ghost cannot change levels to follow you, so this is the only way to escape him. Many players will try to fully explore a level, remembering the location of any ghost urn that spawns, then double back to it after they find the exit and know the way out. The main rule to keep in mind is that you always want to be working your way down in the level, as the exit will be at the bottom.
